Bruschetta is a traditional dish from central Italy, enjoyed as far back as the 15th century. The name refers to toasted bread that is rubbed with garlic, drizzled with extra virgin olive oil, and lightly seasoned with salt and pepper. The most common topping is fresh tomato, but it can also be served with cheese, cured meats, spreads, or grilled vegetables. Bruschetta is typically offered as an appetiser or a light bite when hosting guests.
The secret is market-fresh tomatoes
The secret to truly delicious bruschetta lies in the tomatoes. Sun-ripened tomatoes from a local market have a natural sweetness and depth of flavour that supermarket varieties often can’t match. Choose tomatoes that feel heavy for their size and have a rich, fresh scent — these are usually the most flavourful.
Ingredients for the classic tomato topping
- 4–5 ripe tomatoes
- 2 tablespoons olive oil
- 1 clove garlic
- salt
- freshly ground black pepper
- fresh basil
- 1 teaspoon balsamic vinegar (optional)
How to prepare
Dice the tomatoes into small cubes. If they are very juicy, remove a little of the watery seeds so the mixture doesn’t become too wet. Place in a bowl and add finely chopped or crushed garlic, olive oil, salt, pepper, and fresh basil. Mix gently and let it rest for 10–15 minutes so the flavours can blend together.
Preparing the bread
Slice a fresh baguette and toast until lightly golden. While still warm, rub each slice with a cut clove of garlic and drizzle with a little olive oil. Spoon the tomato mixture on top just before serving.
